I've seen local tofu @ our farmer's market, but I'd say it's much, much easier to find locally raised & slaughtered meat. I'd imagine that's probably the case in Kingsolver's experience--& I'd have thought in general, so your comment surprised me!
We don't get any dried beans *sniff*. That'd be nice! Local lentils or something, har har.
